1 Medium red onion, sliced thinly
Rice Vinegar to cover the above ingredients
1 tbs of Xylitol
1/8 tsp of sea salt
1/4 tsp fresh or dry dill weed
Sprinkle with capers before serving (optional)
Instructions: place onion and cucumbers in a mason jar or other glass container with a lid. Fill with rice vinegar to cover the onion and cucumber. Add Xylitol, dill and salt. Cover, shake light to mix all the ingredients. Marinate for 24 hours in your refrigerator. Sprinkle with capers before serving (optional).
